Okay, in a very very old Better Homes and Garden cookbook, there is a recipe for Barbecured Chili Steak, we have used this for years with great results, if you would like to try.
BBQ Chili Steak
1/2 cup vinegar
1/2 cup catsup
2 talbespoons oil
2 tablespoons finely chopped onion
2 teaspoon chili powder
1 teaspoon salt
1/8 teaspoon pepper
3 pounds beef chuck steak, cut 1 1/2 inch thick
Combine first 7 ingredients. Slash fat edges of meat. Place in shallow dish. Pour vinegar mixture over. Let stand 3 hours at room temperature or overnight in refriderator, turning steak several times. Drain, reserving marinade; pat dry with paper toweling.
Cook over hot coals about 20 minutes on each side for rare, 25 for medium. Bursh occasionally with marinade. Carve across grain in thin slices. Makes 6 servings.
PS I have used this with thinner cuts grilling for much shorter periods, or in the broiler. It has been a long time favorite.
