Most of the time I've seen the panic on boot is when the NFS mount  
fails to be made. What does a 'showmount -e' on the server tell you?

I've seen this cleared up sometimes by just making one manual  
connection to the NFS export from a client Mac. Then it seems to  
respond properly to client boot attempts.
